Can anyone recommend a lager yeast which consistently leaves some sulphur character in the finished beer? There's a certain "freshly struck match" smell which I really like and which, to my mind, makes a lager more lagery. Some yeasts seem to throw off all sorts of farty aromas during fermentation, but still end up disappointingly clean.
Drink it younger? I know what you mean and agree too I like that aroma note that tells you immediately that it is Lager. I get it with all my Lager yeast choices mostly. If you drink them young enough or inevitably that note will fade over time. I cant remember off hand what yeast have more, might get around to reading some beersmith notes.. Also have the whitelabs yeast poster meaning to pin on the wall.
I think it was wlp838 Southern German that got more than usual for me. I tend to think if they even mention Sulfur in the description then it has it to be noted. They always say it has (low, or slight sulfur), to me that sounds like it has more than others. Otherwise best not to mention sulfur. Considering its generalized as an off flavor, or worse! Never really see it added into descriptions as a positive contribution.. ? Need some Lager enthusiasts? to chime in.

True. The pleasant sulphur compounds tend to get lumped in with the truly vile ones. There's everything from a a fresh minerally aroma to rotten eggs. I think subtle amounts of the right compounds are essential for TLT TM (That Lager Taste).
I like the look of the Southern German yeast, thanks for the tip.
