Even here in the darkest South (Taree) my LHBS seems to be selling a heap of the Brisbane produced All Inn fresh wort kits, bag in a box. I've got a few very busy weeks coming up and a fermenter crying out "fill me, fill me" so today I got a Bill F Murray American Malt Liqour wort and about to make it up.
I guess a few forum members have used them, any opinions? At a made-up volume of 20 litres that sounds absolutely ideal for kegging. My only disappointment is that the Bill F Murray only comes out to 5.5% so I'm going to add half a kilo of sugaz to take it into the true Malt liquo' ballpark.
This raises a serious dilemma. Should I be adding a kilo?

Well, if I take a brew example in my beersmith records that is 20l at OG=1.055. Heres some increments. add: Dextrose 0.25kg = 1.059 0.5 kg = 1.064 0.75kg = 1.069
1.0 kg = 1.074 (I'd imagine this will be too high and too dry) for my liking anyway. The FG will probably stay the same so it will just raise the alcohol level.
So basically if its dextrose each 250g raises the alcohol by 0.5%. 1kg will raise it 2%. Re, I'd imagine it will be an over attenuated beer that isn't a good scenario in my experience. You could go 50/50 with dry malt but any additions are going to alter the character and balance of the beer.

grantoogle: Has anyone had a larger yeast fail to fully ferment ( suspect yeast had been over heated in the shop ) what do you do in this case. Throw out and start again or try to ferment again . Had this in a ferment fridge at 12 degrees c for over three weeks . 😔
