Weird thing happened to me with my current beer. It was happily fermenting away for 4 or 5 days, but now all of a sudden has decided to krausen through the spunding valve. I've set it up with the blow off tube so all good, but it seems weird for this to occur so late in the piece?
It's a saison, 50-50 pilsner and ale malt. 36 litres in a 50 litre kegmenter. Yeast is tassie wild saison. OG is 1055. Spunding valve is set to release at 5 psi or so.
16/10 (evening) O2 in wort and pitched a healty cell count. Didn't check but it was a 2 step starter from a vial. Decanted wort each time. Took some off to refill the vial, and pitched the rest. Set to 21 deg C.
17/10 (morning) Spunding valve was releasing gas.
19/10 (morning) Set to 25 deg C (was naturally ramping toward this anyway).
21/10 (arvo), started krausening through valve, so 4 or 5 days after pitch.
Could be fermenting at a low temp causing the delayed kausening.. Don't brew a lot of saison myself but when I do it's always in the low to mid 30's. Goes off like a shower of shit for the first couple of days then slows to a crawl for a week or more, until FG is reached.
